This is a terriffically flavoured smoked duck. We served it by grilling the skin side until it was brown and crsipy, then slicing onto a salad - served warm. Very easy, very good looking and very moor-ish. While summer's still here (has it started yet?) we're guessing that you could substitute your barbeque for the grill. Making the skin crispy certainly enhances the duck breast. This item (approx 180g) will serve four as a starter.

Quail are one of the smallest game birds. This pack weighs about 600g. A serving is two quails, so this pack will serve two. Like a lot of game, they are very lean, so should be roasted with a piece of fat or streaky bacon wrapped around them.

These are wonderful little birds, with a strong distinctive taste, from Scotland. Traditionally roasted and served with game chips (use posh potato crisps), a fruit jelly such as rowan or redcurrant and on a piece of toast or fried bread. This price is for one grouse (about 300g),which will serve one as a main meal. Supplied oven ready. They are lean, so can be roasted with the cavity filled with fruit such as grapes, or raspberries mixed with butter.

Fresh French guinea fowl, about 1.2kg each. Guinea fowl is a great alternative to chicken, it isn't very gamey, much less gamey than pheasant, for example. Good cooked simply, by roasting.

A whole rabbit. We roasted this one, it was delicious, it needs a long roast, cover with fat bacon because rabbit can be dry. Because of this most recipes for rabbit involve some sort of casseroling. Rabbits are traditionally served with a mustard sauce.
