Bass is a splendid looking fish and is very popular because of its fairly robust character, it has more substance to it than many other white fish, with a moist flesh. It's either farmed in Greece or wild, but hook and line caught so that it is sustainably caught. The breams, a portmanteaux term for many species of fish, are similar with a firm, fine grained white flesh, Ours are farmed in Greece. Both are good cooked whole, or we will fillet them for you.
