These fresh red snappers come from the Maldives, they are big fish so that the fillets are thick - the sort of fish that has all the flavour because of its large size. They are like an English seabream, but with a red skin. If you order a whole fresh red snapper it will be cleaned and scaled with the head on.

If you can't be bothered with a whole fish, we will fillet, scale and pin bone a large fresh red mullet, and you'll end up with two wonderful fillets. They are very "meaty" and flavourful, so these two fillets should serve two people (200g or 7oz in total). Try browning the skin side of the fillets in a frying pan, then put into a baking dish with fried onions, some tinned chopped tomatoes, pine nuts and parsley and cook for only 30 minutes at 180°C. This is a frozen at sea red mullet. They are not cleaned as they are frozen. Just defrost and cook as you would a fresh red mullet. 250g (9oz) so enough for two.

These are small red mullet fillets. They are scaled and completely pin boned, and individually frozen. The skin side is an attractive red colour so they add interest to any fish dish. The 1kg bag has about 20 fillets in it, they are completely separate, so it's convenient to keep a bag in the freezer. We've used them in our fish stew, they add colour and a robust fish taste.
