Dover sole is one of the best fish,it has a delicate flavour and its flesh is firm, but not firm enough to be meaty, say like halibut. It's available all year, and it's best cooked whole, grilled or fried.

Torbay soles are similar to Dover soles, but a lot cheaper, as are lemon soles. Both benefit, like Dover soles, from simple cooking as whole fish, but we will fillet all these soles for you.
